Meet Chef Craig Stevens
Chef Craig Stevens’ stylistic cooking is all about Creative Comfort. He takes comfort food, which is traditionally decadent, sugary or fattening, and creates his spin on it. Food that still comforts the soul in its deliciousness (if that’s a word), AND it’s good for you. Based in Williamsburg, VA, when asked why he became a chef, Chef Craig said, “I became a Chef because cooking is a passion for me…I consider myself an artist. Culinary Arts is the only art form where you use all 5 of your senses.”
And His food?…Ahhhmaaaazing!!
“My specialty is pan seared salmon. I like to start it off in the pan and give it a nice sear and then finish it in the oven. It’s basically about the technique.” says Chef Craig.
From his specialty, the seared salmon, to his pastries, loaves of bread, macaroons and red velvet cake, everything he touches melts in your mouth. Chef Craig also has vegetarian options, like Eggplant Vindaloo, also rich in flavor. For the holidays, his Smoked brined turkey, or Turkey Breast and Salmon En Croute (baked in a lovely flaky crust) are crowd pleasers for those who want a slightly different twist. And guilty pleasures always sneak their way into his menu like Red Velvet Cake or Peanut Butter Pie and Chocolate Pecan Pie. O.M.G!
When asked, Why UGottaEat? Chef Craig said “I like UGottaEat because it’s aligned with my own mission statement, healthy, sustainable and fresh food, so it’s a win-win-win. I love cooking with that philosophy, and UGE wants Chefs who cook that way.”
Chef Craig is classically trained at the renowned Culinary Institute of America in Hyde Park, NY. You may be familiar with other Chefs from that prestigious institution like his classmates, Doug Katz, Michael Simon, and Cat Cora. Other prestigious graduates include Robert Irving and Anthony Bourdain (R.I.P). Chef Craig has accumulated an impressive resume in search of his culinary passion. He has a degree in Elementary Education, and an MBA. He is a Certified Executive Chef, Certified Pastry Chef, and Certified Dietary Manager. Currently, he is the Executive Catering Chef, and Lead Culinary Instructor of the American Culinary Federation (ACF) National Apprenticeship Program at the elite College of William & Mary.
